Baked cod with homemade healthy chimmichurri, 1/2 cup rice pilaf and steamed spinach.
I was amazed at HOW MUCH rice is in 1/2 cup!
The chimmichurri was great! And very low in fat since we subbed most of the olive oil (traditionally used) with lemon juice :)
Chimmichurri recipe (makes ~1.5 cups):
1 cup cilantro
1 cup parsley
1.5 lemons, juiced
3 cloves garlic
1 jalapeƱo, deseeded
2 tsp olive oil
1/4 cup red or white wine vinegar
Put ingredients in a blender/food processor and then add Salt, Pepper & Chili powder to taste.
